Challenge

The Kashruth Council of Canada, Canada’s largest kosher certifier, wanted to adapt food safety systems to kosher code to provide a simple option for businesses interested in implementing kosher practice in addition to a food safety plan, but did not have the in-house expertise to develop such a certification system.

Solution

The research team developed a Safe Quality Food (SQF) document, which integrates kosher practices and guidelines into the SQF certification framework, providing an overview on how to meet kosher requirements in a quality control system. The document mirrors the SQF code, integrating kosher into every step deemed applicable, and provides a system for food manufacturing plants to ensure that kosher procedures are followed and costly mistakes are avoided.
