Commercial Kitchen Development and Productivity Enhancement

CHALLENGE

Inniskillin Niagara Estate is a globally-renowned wine production and hospitality centre. In 2009, they started the GEN culinary division to oversee all culinary programming for Inniskillin, Jackson-Triggs and Le Clos Jordanne. Currently, the company executes private dining experiences at both properties daily and has reached a point where they lack space and equipment for day-to-day execution of hospitality experiences and were seeking help to create a kitchen that accommodates current and future growth.

SOLUTION

The College’s Canadian Food & Wine Institute Innovation Centre (CFWI IC) provided high-level ideation and consulting on a new kitchen design that took into consideration menus, themes, audiences, cooking styles, equipment, refrigeration & storage capacity, efficiency of maintenance & safety, current programming & future growth, aesthetics & noise management, green initiatives, and other specifications as identified by Inniskillin. To assist this project, the Walker Advanced Manufacturing Innovation Centre created a 3D digital scan of the current Inniskillin kitchen space, allowing the team to make recommendations for improvements.
