Challenge
Planet Bean is a specialty coffee roaster, retailer and wholesaler with three coffee bars in Guelph, Ontario that offer high quality fair-trade, organic coffee products. They produce fresh, cold brew coffee in-house which is very popular with their clientele however the low margins and short shelf-life limit any market expansion. Cold brew is a growing market and they would like to lower their production costs and increase the shelf-life, without compromising quality, in order to expand their distribution to other retail outlets.
Solution
The CFWI Innovation Centre team completed a project whereby we sourced ingredients, optimized recipes, tested pasteurization methods and conducted sensory analyses on three flavours of Planet Bean cold brew coffee. Following the selection of the co-packer we conducted sensory analysis with a large consumer panel.
