CHALLENGE

Rescue Dogs is Canada’s first all-vegan hotdog and street-fare cart, operating at Ontario markets, events and in downtown St. Catharines a few days a week. As much as possible, the food they produce is locally sourced and organic. Niagara College was approached to investigate ways to increase the rate of production from 200 dogs per shift to 200 dogs per hour. The challenge was to find a new process that would be able to provide such a drastic improvement.

SOLUTION

During the initial meeting, several production methods were discussed, but none fared as well as a sausage casing method. It was found that by switching from the current hand-rolled manufacturing process to using a sausage stuffing machine into a casing, resulted in substantial savings in both manufacturing time and cost. The Research & Innovation team also provided recommendations for areas of improvement in the operations component.
