Expanding French Fry Distribution Channels
PROJECT TYPE
Extending product shelf life
CHALLENGE
Valley Growers is a family run potato farm located in Sudbury, Ontario that has an annual crop of 500 acres. They built a processing plant in 2015 and currently produce and market fresh cut French fries to the Ontario market. They wanted to extend their shelf life but did not have access to food science expertise or analytical testing to help solve this issue.
SOLUTION:
The CFWI Innovation Centre assisted by experimenting with packaging and functional ingredients. To accomplish this goal, shelf life was assessed through both microbial and organoleptic testing. This has resulted in a significant shelf life extension, which enables Valley Growers to expand distribution throughout most of Canada while maintaining a high quality product.
