CHALLENGE
The founders of Darling Mimosa set out to create sparkling, flavorful, mimosas, developed with local wine and real juices, bringing their consumers a tasteful, ready to drink, cocktail. Their beverages are naturally gluten-free, without added preservatives, and made with real juice and Ontario wine which adds to an authentic and natural flavour profile. Darling Mimosa approached the Food and Beverage Innovation Centre (FBIC) to create and scale-up two novel, ready to drink (RTD) alcoholic beverages: grapefruit mimosa and pineapple mimosa, and to optimize their current Orange Mimosa.
SOLUTION
The FBIC conducted feasibility assessments at lab scale, followed by product and process development, sensory trials, and then scale-up at our HACCP certified beverage processing facility.
IMPACT
Darling Mimosa beverages are available at the LCBO and other local establishments throughout Ontario.
