To serve an identified niche market, Cankosh wanted to create a well-balanced table wine using pomegranate concentrate and Niagara grapes, but fermenting pomegranate concentrate is challenging due to high acidity.
Solution
The research team tried several recipes blending fermented pomegranate concentrate with Niagara grapes, and then conducted sensory and taste analysis before developing a successful blended wine product.
